Abstract

Orange fleshed sweet potato (OFSP) is potentially an important source of Vitamins A and C in Africa. Much work is being done to encourage the use of this root crop in the diet. A range of new products has been developed from OFSP but the quality and safety have still to be addressed. This report describes activities that were undertaken in order to inform practitioners in this area about the importance of safety and quality management as well as recommendations no how puree producers could improve their in-house systems. A product with consistent good quality and safety is important if it is going to be accepted by consumers.
