Abstract

Cassava is a tropical root with strategic importance to sub-Saharan Africa, as it is the main source of calories for a considerable proportion of its population. Cassava has a short shelf life and for this reason, cassava processing plays a key role in food security.
Therefore, we developed a cassava processing centre that fits inside a shipping container, it can process 13,200 kg of fresh cassava roots per day.
